Recipe for curd cheese balls: It's so easy to prepare them

  • Mix the flour and baking powder and sieve through a fine sieve.
  • Beat the eggs and sugar until frothy.
  • Then mix in the curd and little by little all the other dry ingredients until you get a sticky, quite soft dough.
  • Heat the fat in a tall, narrow saucepan. Use a wooden spoon * to test whether it is hot enough. As soon as you hold the stem on the bottom of the pot and bubbles form there, you can start.
  • Shape about 30 balls with your hands. Flour your hands lightly so that the dough doesn't stick. If that doesn't help, you can shape the balls with two tablespoons or an ice cream scoop, but that's more complicated.
  • Fry only three to four quark balls at a time in the fat, as these still open and need space.
  • You may have to turn the curd balls in the fat so that they turn golden brown all around. It takes about three to four minutes.
  • Take the quark balls out of the fat with a slotted spoon and then roll them in the granulated sugar.
  • The best way to enjoy the quark balls is fresh.
