In “The cookie of our dreams” (First Editions), the gourmet bookseller Déborah Dupont-Daguet and the culinary photographer Géraldine Martens have brought together 59 variations around the delicious cookie. For this first episode of “Cook confined”, we called Géraldine by WhatsApp so that she would help us make one of her favorite preparations: the almond and chocolate cookie. A revisited sweetness reminiscent of financiers or macaroons of yesteryear.

The ingredients for the chocolate almond cookie recipe
For 12 cookies
- 50 g almonds
- 50 g milk chocolate
- 70 g flour
- 150 g brown sugar
- 200 g almond powder
- 1 egg (or 2 good tablespoons of soy yogurt)
- 70g soft salted butter
The recipe steps
1. Prepare the dough
Coarsely chop the almonds and chocolate.
In a bowl, mix the flour, brown sugar and almond powder by hand. Add the egg and butter. Mix. When the dough is homogeneous, add the almonds and the chocolate.
2. Form cookies
Form pucks of 50 g and about 2 cm thick. Place them on a baking sheet covered with parchment paper. Put 30 minutes in the refrigerator.
3. In the oven!
Bake for about 10 minutes at 200 ° C. Cookies should be lightly golden but soft on the inside.
