Yeast is scarce or even sold out in many supermarkets. If you still need yeast, you can make it yourself. We reveal how to do it.
- Yeast is a leavening agent.
- You need them to bake bread and for many other recipes.
- What to do if the yeast is sold out?
Some supermarket managers are already predicting that yeast is the new toilet paper. At the moment, yeast is sold out in many places and people who want to bake bread *, for example, are looking into the tube.
But that doesn't have to be the case. You can prepare yeast yourself and only need three ingredients that are guaranteed to be available for purchase.
You need these ingredients to make yeast yourself
- 500 ml water
- 30 g of sugar
- 2 dried dates, unsulphured (other dried fruit such as plums or apricots)
- 1,500 ml container, closable, e.g. a screw jar

How to use your homemade yeast
Of course, your own yeast looks very different from the one you can buy in the supermarket. It is a yeast water instead of a solid yeast mass. If you want to bake with the yeast water, simply replace the liquid in the recipe with the yeast water .
If the yeast water is still fresh, you should use 200-250 milliliters per 500 grams of flour , as the driving force is not yet fully developed. It's best to let the yeast dough rise overnight.
How to quickly make new yeast from yeast water
If you have made the first yeast * yourself, you can draw new yeast from the yeast water . This is also faster than with the original approach.
Since this mixture is already partially fermented, it matures faster. It should be ready for use within four days .
