  • 450g flour (Type 405)
  • 1/2 tsp dry yeast

How to prepare the quick bread from the pot

  • Mix the flour, yeast and salt in a large enough mixing bowl.
  • First add 350 ml of lukewarm water and stir everything until a smooth dough is formed. If necessary, add more water if the dough is still too dry and lumpy. Important: Never knead (the dough would be too sticky for that).
  • As soon as a ball has formed from the dough, cover the bowl with a clean, damp cloth and let the dough rise at room temperature for up to 16 hours .
  • Check the dough before further processing. It should have risen and show some bubbles or holes.
  • Preheat the oven to 230 degrees top and bottom heat.
  • Now sprinkle a baking paper with some flour and then carefully transfer the dough out of the bowl onto the paper.
  • Shape the dough loosely and without kneading into a ball and cover it again with a damp kitchen towel.
  • Now take an ovenproof pot - ideal is a cast iron roaster with a diameter of about 25 cm and lift the dough ball and baking paper into it.
  • Put the lid on the pan and bake the bread for 30 minutes.
  • Then remove the lid and bake the bread for another 10 to 15 minutes until it has a nice golden color and is crispy.
  • Then lift it out of the pot and use the knock test to check whether the bread is through. It should sound hollow when you knock on the floor.
  • Let the bread cool on a wire rack and enjoy it as fresh as possible.
