You need these ingredients for rhubarb compote

  • 750 g rhubarb
  • 50 g sugar (a little more possible, depending on how acidic the rhubarb is *)
  • 2 tablespoons of sugar
  • 100 ml water
  • 1 tbsp lemon juice *
  • 30 g starch

How to prepare the rhubarb compote

  • Wash the rhubarb stalks thoroughly under clear water. 
  • Remove the leaves at the top of the rods.
  • Remove the cut end when it is dry.
  • Now put a kitchen knife where the leaves used to be, cut a little bit and pull the fibers downwards. How to remove the woody fibers . You can also machine thick, older bars with a peeler.
  • Now cut the peeled rhubarb into rough pieces and put it in a saucepan.

  • Now stir the starch with a little water (about 6 tablespoons should be enough) and stir the mixture into the compote. Simmer for another minute until it thickens.
  • Sweeten the rhubarb compote with 50 g of sugar. If it tastes too acidic, you can gradually add more sugar until you are satisfied with the taste.
  • Now you just have to let the rhubarb compote cool down and enjoy, for example with vanilla sauce .
