What is cucurbitacin?

The bitter taste in the zucchini  is caused by cucurbitacins, which are formed by zucchini and various other pumpkin plants.

This poison was raised from cultivated varieties intended for human consumption . However, the Chemical and Veterinary Investigation Office in Stuttgart reports that if the zucchini seeds self-propagate, spontaneous back mutation can lead to the growth of cucurbitacin-producing plants.

The poison dissolves the mucous membrane in the gastrointestinal tract and then causes the kind of symptoms that Elke Frahm had to experience last year. In particularly severe cases, cucurbitacin poisoning can be fatal . However, the strong bitter taste actually prevents excessive consumption.
