  • Hermann dough is a sourdough that you can give away.
  • This makes a wonderful yeast cake, the Hermann cake.
  • This is how you succeed in the classic.

Many households had a Hermann in the 80s. No, that's not because the name was particularly modern at the time. "Hermann" was more an expression of friendship, because the so-called sourdough was often passed on as a guest gift.

During the corona crisis, when yeast was a scarce commodity, the Hemann dough made a comeback and with it the Hermann cake . We'll tell you how to bake this delicious yeast treat.

These ingredients are needed for the Hermann dough

For the batter:

  • 100 g wheat flour
  • 1 tablespoon of sugar
  • 10-11 g fresh yeast (alternatively: 0.5 pack dry yeast)
  • 150 ml lukewarm water

1. Feed:

  • 100 g wheat flour
  • 150 g of sugar
  • 150 ml milk

2. Feed:

  • 100 g wheat flour
  • 150 g of sugar
  • 150 ml milk

How to make the Hermann dough

  • Put the flour in a large enough bowl (no metal) . It should hold about 1.5 liters and be lockable.
  • Dissolve the sugar in the lukewarm water and crumble the yeast into it. Stir well and cover.
  • When the mixture starts bubbling , pour it into the flour and stir well with a wooden or plastic spoon until a smooth dough is formed.
  • Close the bowl with a lid and let the batter rise for two days at room temperature. Stir occasionally.
  • Then put the batter in the fridge and continue as follows :
  • day 1
