I like to watch the sautéed chicken cubes in a batter of egg yolk, cornflour and soy, which keeps the chunks juicy inside and also adds texture and color like those of sautéed in restaurants in Thailand.

Ingredients

- 500 g chicken breast cut into cubes, size 2 * 2 cm
- 1 yolk
- 2 tablespoons soy
- 1 cupcornflower
- ½ Whipped cream
To the popup
- 1 onion cut into cubes measuring 2 * 2 cm
- 1 red pepper cut into cubes measuring 2 * 2 cm
- 1 green onion cut into 3 cm sections
- ½ A teaspoon of ground chili pepper
- 3 tablespoons soy
- 3 tablespoons honey or maple or sweet chili
- 1 roasted couscous
- 1 tablespoon sesame seeds
- A handful of basil or Thai basil (PA)
Preparation
How to make stir-fried chicken with cashews?
1 Mix the chicken, egg yolk, soy and cornflour cubes in a bowl and let it rest for 10 minutes.
2 Heat about half a cup of oil in a pan or wok. Fry the chicken cubes until browned and remove with a slotted spoon.
3 Carefully pour in the oil and add the onion and pepper to the hot pan. Fry for a minute or two.
Season with soy, honey and chili, return the chicken and stir until it is coated in the sauce.
5 Add the green onions and cashews and continue to cook together for another 3 minutes, stirring or sautéing.
Sprinkle over sesame seeds and basil leaves and serve over white rice.
