Blitz cheesecake with berries: these are the ingredients you need

For the ground:

  • 200 g shortbread biscuits

  • 100 g melted butter

  • 1 pinch of salt

For the cheese mixture:

  • 600 g double cream cheese

  • 200 g sour cream

  • 4 sheets of gelatin

  • 120 g of sugar

  • 1 lemon

  • 1 TEASPOON.

    Vanilla flavor

  • 200 ml of cream

For the berry mirror:

  • 200 g berries (blueberries, strawberries or mixed)

  • approx. 2 tbsp sugar (amount depends on the sweetness of the fruit)

  • 2 tbsp lemon juice

  • 2 sheets of gelatin

How to bake the lightning cheesecake with berries

For the ground:

  • Cut the biscuits into fine crumbs.

  • Mix the biscuit crumbs with the liquid butter and a pinch of salt.

  • Line the bottom of a 26 cm springform pan with baking paper and almost squeeze the biscuit and butter mixture into it as the bottom.

    Then chill in the refrigerator for about half an hour.

  • For the cheese mixture:

  • Soak the gelatine in cold water according to the package instructions.

  • Mix the cream cheese with the sour cream and add the sugar, the zest of half a lemon and the juice of the whole lemon, as well as the vanilla flavor.

  • Dissolve the gelatin according to the package instructions.

  • Add a few tablespoons of the cream cheese mixture to the gelatin and stir well.

    Then add the whole thing back to the rest of the cheese mixture and stir everything thoroughly.

  • Whip the cream until creamy, but not too firm, and then carefully fold it into the cream cheese mixture.

  • Then spread

    the

    mixture evenly and smoothly on the floor

    and let the whole thing cool for at least four hours, but even better overnight, in the refrigerator and set.

  • For the berry mirror:

  • Mix the

    berries with sugar and a little lemon juice to taste

    and puree them.

    Then brush them through a fine sieve to remove seeds or pellicles.

  • Soak the gelatine according to the instructions on the package and dissolve it.

  • Add a few spoons of the berry mixture to the warm gelatine and mix everything together.

    Then add the whole thing back to the remaining berry puree and stir everything thoroughly

  • Spread the berries as evenly as possible

    on the cheesecake, which has cooled down in the meantime,

    and let the cake set in the refrigerator for another two hours.

  • Before you can
