What do you prepare for a closed family during the holidays?
Something that will be colorful and happy to gather around, but also light between all the heavy holiday meals.
So I created a treat tray made up of green pancakes with spinach and herbs, spiced sweet potato cubes and baked chips.
If you want, add a fresh salad, tahini and maybe some salsa, serve in the center of the table and see how all the hands are sent.

Ingredients
For spinach and oatmeal pancakes
500 grams of spinach
½ Chopped parsley
1 large chopped onion
2 eggs
½ Quick-prepare oatmeal
1 teaspoon salt
1 teaspoon ground black pepper
1 teaspoon sweet paprika
Frying oil
For spicy sweet potato cubes
2 large sweet potatoes, cut into medium cubes
1 as a crystalline apple
1 teaspoon ground chilli
4 tablespoons olive oil
1 teaspoon coarse salt
1 teaspoon ground black pepper
2 tablespoons soy sauce
For baked chips
2-3 large and elongated potatoes
5 tablespoons olive oil
1 teaspoon coarse salt
1 as a crystalline application

How to make spinach pancakes with baked chips and sweet potato cubes?

How to prepare the patties: In
a large pot or pan, sauté the spinach (no water or oil is needed).
Chop the steamed spinach and mix in a bowl along with the rest of the ingredients.
Leave for 10 minutes so that the oats absorb the liquid and if necessary add another tablespoon.
2 Heat in a shallow oil pan and form slightly flat patties.
Fry until browned on both sides and transfer to absorbent paper (can be prepared in advance and preheated in the oven).

How to make spicy sweet potato cubes:
Mix the sweet potato cubes in a deep bowl with the spices, olive oil and soy and flatten in a wide pan lined with baking paper.
Place in a preheated oven at 180 degrees for 30 minutes, until browned.

Bake making baked chips:
Slice the potatoes with the peel into thin slices half a centimeter thick and place in a wide bowl. Pour boiling water over them until covered and simmer for about 20 minutes.
5 After 20 minutes, rinse, filter from the water and mix with the oil and spices.
Arrange in one layer on a baking sheet lined with baking paper.
Place in an oven preheated to 180 degrees and bake for 25-30 minutes, until golden.

Serving:
After everything is ready, place on a large tray next to a bowl of tehini, chopped salad and tomato or salsa salad.
