When autumn came, my grandmother would make us small, warm and pampering burritos pastries with different fillings.
With or without hard-boiled eggs nearby, they are perfect for dinner or Saturday breakfast and as they fill the house with tantalizing scents, they will put a smile on the faces of young and old alike.

Ingredients
For dough:
½3 cups puffed flour (490 g)
150 grams of butter
250 grams of white cheese
1 teaspoon salt
For the stuffing:
300 grams of cheese for baking (Canaan / Tabor / Taste)
½ teaspoon of salt
4 champignon mushrooms
For baking:
scrambled egg

Preparation
How do you make cheese and mushroom burritos?
1 Preheat oven to 180 degrees.
2 Put together the dough ingredients, until a uniform dough is obtained.
Let rest on the counter for 10 minutes.
3 Meanwhile, crumble the cheese into a bowl, grate the mushrooms on the coarse side of a grater, season with salt and mix.
4 On a lightly floured surface, roll out the dough into a sheet half a centimeter thick and make circles with a pinch or cup.
5 Place a teaspoon of the filling in the center of each dough circle, fold in half and fasten the edges together with a fork or fingertips.
Place on a baking sheet lined with baking paper, brush with beaten egg, sprinkle with sesame seeds and bake for about 25 minutes.

Do not like mushrooms?
Replace them with chopped olives or sun-dried tomatoes.

Add herbs like chopped chives, oregano, hyssop leaves or basil.
