Pasta with veal almonds and asparagus (Photo: Nimrod Saunders)
Veal almond and asparagus pasta
A regular Itai recipe from the Basta restaurant in the Carmel market for sauteed veal almonds with asparagus, leeks and pasta.
The veal almonds only require burning and a slight bounce on the pan, so while the pasta is cooking, pour wine into glasses and for a moment feel like a private chef’s meal at home.

Whole roasted fish with pasta
This recipe is brilliant because the result is not only impressive in appearance but also in taste (and we say this responsibly and with experience).
The base of the sauce is whole cherry tomatoes that are seared over high heat with garlic and hot pepper until they are drained of great juices.
The lasagna leaves or any other large pasta, slide into the sauce, leaving parts that will protrude slightly above it and put in the oven along with whole fish.
Everything that happens next is a real pleasure - the pasta absorbs the flavors of the sauce and the fish and in the parts that it is exposed without sauce, it is crispy and delicious.

A parfait in a dismantled lamb market
Put a lamb shank with coarsely chopped vegetables, herbs and white wine in a deep pan and 'forget' in the oven all night.
The next day when the meat falls off the bone add it to the pasta along with the juices he chalked during cooking and do not believe how the Italians did it again.
10 minutes of preparation, 8 hours of patient waiting and a perfect pasta meal that is enough for an entire family.
