Ingredients
For vanilla cream and white chocolate:
½ Vanilla stick
160 g 38% sweet cream
380 ml for 3% milk
2 egg yolks (40 g)
½3 tablespoons cornflour (35 g)
270 grams of white chocolate, coarsely chopped
55 grams of cold butter
For white chocolate coating:
500 grams of white chocolate
50 ml for oil
For decoration:
200 gram white cranberries
200 g grated white chocolate with a coarse grater for curls

How to make vanilla cream and white chocolate?

How to make vanilla cream:
Cut the vanilla pod lengthwise and place in a pot.
Add the cream, milk and half the amount of sugar and bring to a boil.
2 Place the remaining sugar in a bowl.
Add the egg yolks and cornflour and stir well.
3 Gradually pour the hot milk mixture into the yolk mixture to compare temperatures.
Pour the mixture into the pot and cook, stirring constantly over a medium flame until simmering and bubbling.
4 Place the chopped white chocolate in a bowl and pour the milk, eggs and cornflour mixture over it.
Mix well with a whisk or blend rod.
Add the butter and continue to combine the cream.
Place cling film right on top of the cream to prevent crust formation, and refrigerate until used.

How to prepare a white chocolate coating:
Place the chocolate and oil in a heatproof bowl over a pot of boiling water (Ben Marie) and mix alternately to a smooth, uniform mixture.

assemble
the donuts:
Mix the chocolate pearls with the chocolate chips in a bowl.
Transfer the cream we prepared to a perfusion bag with a smooth center with a diameter of 7 mm.
Fill each donut from above.
Heat the white chocolate coating (32 degrees) and dip each donut in the white chocolate coating, and place the garnish on top.
7 Sprinkle over each spiral donut from the remaining vanilla cream using a 12 cm diameter star catheter and serve.

Mix the remaining vanilla cream with an equal amount of milk and fill with plastic chaser syringes (available at specialty stores) or serve in nearby chaser glasses.
