These patties do not need a sauce, they are the most delicious just like that, as they are.

Their secret lies in the foam coating in which they wrap a moment before frying.



Lightly whisk proteins into a soft foam and just before the patty enters the hot oil, dip it in a foam that creates a golden coating, with a pleasant texture and great taste.

They are perfect when hot and out of the pan and are ideal for a sandwich, especially of a Friday lunch.

Ingredients

  • For beef patties:

    • 500 g Beef minced meat (preferably rib surgeon - No. 2)

    • 1 large onion

    • 2 slices of bread

    • 1 teaspoon salt

    • 1 as Phytras to shop

    • ¼ as cinnamon

    • 2 tablespoons oil

    • 2 egg yolks

  • For frying the patties:

    • 4 proteins

    • Pinch of salt

    • Frying oil

Preparation

How to make patties in a foam coating?

  • 1 Soak the slices of bread in water, squeeze not all the way through (there will be some liquid left in them) and chop.

    Grate the onion on a coarse grater (alternatively you can chop the onion and bread together in a food processor with a metal blade).

  • 2 In a bowl, mix the onion, bread, minced meat and the rest of the patty ingredients.

    Put about two minutes until a uniform mass is obtained.

  • Make from the meat mixture flattened patties the size you like - first roll into a ball and then mash between your hands.

    Tip:

    If you want to get a smooth and beautiful patty, work with oiled hands.

  • 4 Beat the egg whites with a pinch of salt for about 3 minutes, whisking vigorously by hand or for a minute with a mixer.

    A very soft white foam with tiny bubbles should be obtained.

  • 5 Pour into a wide pan 2 cm high oil for frying the patties and heat over a medium flame.

  • 6 Dip each patty in the egg foam and transfer to a pan with the hot oil for frying.
