“Can the court even still call itself cordon bleu?” some people may now ask.

Why not, because if you take it seriously, the name refers to the blue ribbon of the chefs, which is considered a synonym for a particularly high level of culinary art.

And let's be honest, whoever comes up with the idea of using dumpling dough to conjure up more than just grandma's potato dumplings really deserves this award, right?

A vegetarian potato pocket with tomato and mozzarella filling goes like this:

For dumpling dough cordon bleu with tomato and mozzarella you only need a few ingredients:

  • 1 pack (750 g) of “dumpling dough half & half” on the cooling shelf

  • 1 egg

  • 0.5 tsp salt

  • 0.5 tsp pepper

  • 1 tsp Italian herb mixture

  • 40 g basil pesto

  • 50g cherry tomatoes, sliced

  • 100g mozzarella, sliced

  • Cooking oil for frying

The preparation is simple and quick:

  • Knead the dumpling dough well with the egg yolk, salt, pepper and Italian herbs and shape into palm-sized flat cakes.

  • Spread half of the flatbreads with basil pesto in the middle and top with cherry tomatoes and mozzarella.

Cover with another flatbread of dumpling dough and press the edges together well.

  • Heat the cooking oil in a deep pan and fry the potato flatbreads until golden brown all over.

This takes about five minutes on each side.

Remove and drain on kitchen paper.

  • This goes well with a green salad with homemade dressing.

    Zack – done!

Dumpling dough from the refrigerated section is particularly popular on social media due to its versatility.

You can upgrade simple dumplings to three-ingredient potato parmesan dumplings or top the dumpling dough into small tarte flambées.

Or you can give a juicy meatloaf from the oven a crispy dumpling topping, because whatever tastes good is allowed.
