Oktoberfest because of corona virus: oxen come from Ismaning

The oxen are raised on the Karlshof estate in Ismaning. In fact, the city of Munich has ten of its own goods that are ecologically compatible and that serve as a property reserve. Oxen have been fattened at the Karlshof since 1986, and one of the major customers has been the Haberl gastro empire with Haberl daughter Antje Schneider at the top since the 1990s . In tandem with her mother, Schneider is also the host of the ox roast at the Oktoberfest.

The cattle buy the estate from Bavarian breeders. They are six months old. At the Karlshof they become oxen through castration and at the end they become Oktoberfest delicacies. “The animals get their special meat from the long fattening, which means that more intramuscular fat is stored and a fine-fiber, marbled meat is created,” explains Alfons Bauschmid, second plant manager at Stadtgüter. For a good year you can live a happy life in the airy open stable . By the age of 20 to 22 months they had reached Oktoberfest weight - up to 780 kilograms.

The butcher always waits at the end of August because the oxen have to hang out a bit before they land on beer and music on plates. Names like "Xaver" or "August" are written on chalkboards so that everyone knows who they are eating. “The animals only get their names in the marquee,” explains Bauschmid. "It's a tradition."

It would be done again this year. The Xavers and Augusts are now around a year and a half old and are getting heavier every day. But there is no hope for a longer life for them . "Naturally, the oxen that were intended for the ox roasters are processed by Haberl Gastronomie into high-quality dishes," explains Chef Antje Schneider. The problem: Because of the corona virus, the restaurants and beer gardens of the Haberls are currently closed .

Ochs-to-go: After the Oktoberfest, the planning started

But need makes you inventive. From Saturday there will be ox treats to take away at several locations - at the Chinese Tower and at the Schinderstadl on the Flaucher all week from 10 a.m. to 5 p.m., at the Michaeligarten in the Ostpark, at the Hopfengarten in the Westpark and on the Kugler Alm in Oberhaching, every Friday to Sunday - depending on the weather. The planning for the ox-to-go had started with the cancellation of the Oktoberfest, explains Haberl spokeswoman Maria Pinzger, initially oxen are processed, which the Haberls obtain from the estate all year round. And then it will hit the Oktoberfest oxen.

Preparations were in full swing on Friday . Booths had to be completely rebuilt, staff had to be taken out of short-time work - and of course security measures had to be taken because of the virus. Otherwise, the sale could quickly be over. Pinzger emphasizes that there will be no beer garden atmosphere. The ox treats and drinks, which you can also buy, are purely for take-away. Pinzger hopes that customers will abide by the rules. "We'll do this for as long as we can. But of course you have to see what the authorities are doing. ”

An ox roll, which should taste as good as at the Oktoberfest , will cost 7.50 euros . Alternatively, there are ox meat patties for four euros each or an ox sausage in the roll for 4.60 euros. And if you want to come in the Oktoberfest outfit, you can of course do so.

The Karlshof manor at Freisinger Strasse 64 in Ismaning will soon be selling ox meat again - albeit in raw condition . The farm shop will be open as usual on Wednesdays from 1pm to 6pm and on Fridays from 8am to 1pm. “For the barbecue season we can recommend our ox steaks. These are real delicacies, ”says Bauschmid. Larger quantities have to be pre-ordered.
