After l'Abeille, 2-star at the Shangri-La palace (Paris 16th), the Grande Maison by Pierre Gagnaire (Bordeaux) and the restaurant Antoine de Thibault Sombardier (Paris 16th), a new restaurant awarded by the Michelin Guide is undergoing the consequences of the Covid-19 economic crisis.

Sylvestre, the gastronomic restaurant located on the first floor of the Thoumieux hotel (Paris 7th district), owned by the Beaumarly group of Gilbert and Thierry Costes, will not reopen its doors. Its chef Sylvestre Wahid, who took over from Jean-François Trap in 2015, and awarded two macaroons by the Guide rouge, has just announced it on his Instagram account.

“Now the story will continue, elsewhere… otherwise… it's a whole gastronomic world that needs to be rethought… the world is sending us a signal, it is crucial to hear it. We are paying the price for unreasonable consumption, without respect for the living ... the challenge will be important but how much necessary if we want, as chefs, to continue to make people dream, to give pleasure and to last over time! " the chef commented on the social network. He now wants to focus on new projects, in particular giving pride of place to plants that are close to his heart. “For the rest, I leave myself time for reflection. I'll reset everything. Where I want to settle, when, how, why: I give myself 6 months to make decisions. I think you have to be reasonable and not rush. I have been working hard for 20 years, so now I will think carefully about the future and where I want to go. Especially since I am very well surrounded, and especially since I am overflowing with ideas! ” he explained to the professional magazine Le Chef .

Born in Pakistan and emigrated to France with his family as a child, Sylvestre Wahid, soon to be 45, trained with Thierry Marx at Cheval Blanc (Nîmes), before working for Alain Ducasse and then taking the reins. from L'Oustau de Baumanière to Baux-de-Provence, and from Strato to Courchevel.

The Thoumieux hotel has reopened its doors. As for the brewery on the ground floor, it will reopen at the end of August, in a new version.
