The cuisine, the cooks, the restaurants and the associations that group them in Peru have been part of the history of citizenship and resistance that the country has just experienced.
They have participated in the marches, exercised as activists, committing themselves to the recovery of democracy, and have spoken with clear and direct public statements, without the circumlocution to which we are accustomed.
