Ashkenazi food special at Solika

Chef Avi Bitton, as you know, comes from a Moroccan Turkish home, but has always testified to himself as one who connects to all types of food, even if they are not necessarily related to the environment in which he grew up - Pardes Katz.

This coming weekend, on Thursdays and Fridays only, Bitton chose to "pick up" at the branches of his deli "Solika" for Ashkenazi food.

Yes yes, the one who suffers from an image of gray, vibrating and bland.

As mentioned, this coming weekend, Bitton will prepare a variety of specials from the Ashkenazi cuisine in its own versions, which are especially intriguing in our opinion.

Among other things, he finds in the deli chopped liver, chicken soup with carpels stuffed with meat or potatoes, hazelnuts (stuffed chicken neck), roast beef with dumplings, gefilte fish, legged leg and even a "Mea Shearim kegel".

"I grew up in an apartment building in Pardes Katz," Bitton said.

"Although most of the neighbors were of Iraqi descent around me, there was one family on the floor below us who did not smell the turmeric or the behart but smells I did not know. And as a greedy child, growing up to be a chef, I often found myself peeking into the apartment. "From some community, and the neighbor saw a curious boy and put me in her kitchen. This is my first acquaintance with foods like carpels, chopped Polish liver, pickles and garlic and dill."

"I really liked what I tasted and later when I found myself cooking for a living I explored more and more this kitchen which is very far from where I came from. Today I already have the title of 'Ashkenazi of honor' because even a legged leg I like to eat. And forgive me all my Moroccan friends. A dream come true - I bring to the audience the Israeli dining table as I see it: as one that has all the different ethnicities and extremes. The fact that I am Turkish-Moroccan does not mean that only for these reasons I limit my "home" cooking. On the contrary, my children snack on carp. Less than they are snacking naked. "
