The focus at the opening of the white sausage party was not only actor Arnold Schwarzenegger and his partner Heather Milligan, but also - to his left - master butcher Hans Holnburger.

At the legendary white sausage party in the Stanglwirt near Kitzbühel, master butcher Hans Holnburger's white sausages were in great demand - so hot that even the iron reserve had to be opened.

Miesbach – “In a good house, good things never run out,” was the advertising slogan for golden chocolate hazelnut wafer balls in 1988.

Hans Holnburger can claim the same maxim.

Because at the white sausage party at the Stanglwirt in Going before the ski race weekend at the Hahnenkamm in Kitzbühel, 7,000 sausages were not enough for the 2,800 guests in a great party mood.

“It’s all gone,” says the master butcher from Miesbach.

But the 88-year-old and his experienced team of butchers are also well prepared for such an eventuality.

“We always have a spare box with us,” reveals Holnburger.

“It would be terrible if the Weisswurst party ran out of Weisswurst at the end.”

But they didn't go.

Instead, there was a lot of praise from the guests for the secret main attraction from Miesbach.

“Our sausages were very well received by the audience,” says Holnburger happily.

“Everyone enjoyed it – that’s how it should be.”

For the master butcher, this recognition counts for more than standing in the inevitable storm of flashbulbs - which is inevitable when US superstar and white sausage party regular Arnold Schwarzenegger is there with his partner Heather Milligan.

“It won’t last,” he says with a smile, “but I don’t feel completely comfortable there.

That's not my world.” But without Holnburger Weißwürste there would be no Weißwurst party before the Hahnenkamm race.

As is well known, Holnburger's son Toni, who died in 2019, started the mega event as an eight-person regulars' table together with senior Stanglwirt Balthasar Hauser in 1991.

For over 30 years, the enthusiasm has been so great that the festival has grown to a limited number of 2,800 guests.

Continuous supplies provided

Hans Holnburger and his wife Kathi didn't get bored either.

Looking around, chatting and always keeping an eye on the large white sausage cauldron - “the time went by quickly,” says Holnburger, who was there until shortly before 3 a.m.

The next day after coffee we went back to Miesbach as planned.

His conclusion: “It was great as always – because it’s so familiar.”

While the party was attended by many stars - including The Boss Hoss, Andreas Gabalier, Ralf Möller, former US Secretary of State John Kerry, GNTM winner Barbara Meier, ski legend Christian Neureuther, DJ Ötzi, Elton, Mark Keller (" “Bergdoktor”) and Oli P. as a DJ – gained momentum, the five-person butcher team around Holnburger had to work with concentration.

While the white sausages were taken out of the large cauldron upstairs and distributed to the guests, the supplies had to be continuously preheated in the basement.

Once the right temperature was reached, it went up and into the kettle.

For good reason, as Holnburger explains: “The sausages have to be warm, because in the kettle you can no longer tell which pair is already at the right temperature and which still needs heat.” And because there were white sausages until the end at 4 a.m , there was no boredom among Holnburger's employees either.
