Sunday lunch of… Boris Campanella

Director of gastronomy at the Hôtel de Crillon and executive chef of L'Écrin (1 star), Boris Campanella has not forgotten anything about his Sunday lunches with his family.

“For me, they are synonymous with sharing,”

he confides.

We sat around beef bourguignon, a leg of lamb in a crust or a sausage grilled with vine branches.

Today, I am still inspired by these recipes.

Paella is that of my grandmother who lived near Montpellier, prepared with offal, rabbit, squid, large shrimp, mussels, clams, fennel... I can't help but cook everywhere, everything time, in the restaurant of course, but also, at home, for my family, and even when I am invited, I spend time in the kitchen.

I must have got that from my restaurateur parents, fans of large tables at home.

It’s this conviviality, this pleasure that made me want to pursue this profession.”
