There are holiday shopping, also of food, that we try to anticipate.
Even some of the dishes that will star on the table are already stored with some of us in the freezer - and many will be prepared over the next week and stored in the refrigerator for the eve of the holiday.
Quality meat, however, is almost always a last-minute purchase.
In recent years, as part of the evolving culinary hospitality culture, most retail chains have invested in quality meat departments, where you can find cuts that previously could only be found at an expert butcher.

It is true that meat can also be purchased ahead of time and stored in the freezer, especially when it comes to schnitzels for example or ground meat that will eventually become patties that will absorb the flavors of the spices, not to mention those cooked in the sauce.
And yet - true meat lovers will almost always wait for the last days, as the flavors of fresh meat will always be better than that of a portion spent in the freezer.

The holiday where tradition wins the trend
Alongside the trend of switching to vegetarianism and veganism, for many - even if they have become "reducers" (ie those who routinely avoid eating meat, but occasionally relish a portion they have a hard time giving up - from entrecote, through hamburger to schnitzel or shawarma).
There is even a reference to this from tradition, although in those days those who gave up meat routinely did so mostly out of lack of means.
As it is written in the Talmud: "There is no joy but in meat and wine" - two products that even those who do not routinely consume, will find it difficult to give up at the holiday table.

The survey found a gap of almost NIS 270 between the cheapest dish in its meat department - the Victory chain, which was the only one to "return more than a thousand", with a basket for which we paid only NIS 996.53, and the chain that was found to be the most expensive: the market warehouse chain. NIS 1,266.41.
