No matter what denomination you are from, there is no holiday meal that will not end with a honey cake.
The variety this year is huge, as are the price differences.
Here is what we found on the honey cake shelves, at prices between NIS 5 and NIS 138: traditional, surprising, fur, dairy - and there is even a recipe for a gluten-free honey cake

Until a few years ago, this Israeli classic was a relatively dry and boring cake, but it seems that the bakeries (and coffee), confectioneries and chains offer a huge variety of honey cakes this year: some traditional and at equal prices for every pocket and some beautiful, tasty and much more expensive.

Achva, continues the annual tradition for Rosh Hashana and the Tishrei holidays, and offers a honey cake in a hush, with the texture and taste of home baking at a particularly discounted price: only about 5 shekels!

Particularly delicious (and surprising to note) is ricotta honey - a honey-rich honey cake filled with ricotta cheese - looks innocent but surprising in serving.

The Roldin chain also offers a greater variety this year than in previous years, with a diverse holiday collection.
This year's collection boasts fancy and surprising cakes and the choice between dairy and fur.
Along with the traditional cakes, this year will also star: Amarti honey cake, Sabosa honey cake and raspberry honey cake.

In the "Smells and Flavors Market" chain, everything is made using traditional methods by hand, and all the raw materials are purchased directly from Israeli farmers.

Gluten free but with a lot of flavor
The "Biga" coffee shop chain is launching an apple and honey cake and a honey cake for Rosh Hashanah, both of which are gluten-free.
The Biga chain is launching a festive and special collection for Rosh Hashanah, which includes a selection of classic and traditional cakes on the purity of honey and apples.
In the festive collection, Biga - alongside the traditional cakes - is also launching gluten-free honey cakes with a taste of yesteryear, and in addition is launching a gluten-free apple honey cake for health lovers, gluten-free food lovers or celiac sufferers.

A recipe for gluten-free honey cakes
On the occasion of the launch of the gluten-free honey cake, the main confectioner of the Biga chain, Ran Ben David, reveals a recipe for making such a cake at home:
Ingredients:
100 Demerara brown
sugar 100 white sugar
300 honey
120 eggs
200 oil
350 flour for lag cakes (recommends Tami flour)
7 g Baking powder
2 g baking soda
1/4 teaspoon salt
1 teaspoon cinnamon
1/4 teaspoon cloves
200 ml dark tea
How to prepare:
Preheat oven to 165 degrees.
Expect an English mold on baking paper.
Beat in a Caesar with a whisk: the sugar, honey and eggs until an airy mixture is obtained.
Add the oil slowly until incorporated and a uniform mixture is obtained.
In a bowl, mix all the dried ones and add to the mixture.
Once the mixture is smooth add the tea until a uniform texture is obtained.
After pouring the mixture into the mold you can add sliced almonds or nuts.

It only remains to bake the cake for about 35-40 minutes until the toothpick comes out of it dry.
It is recommended to close the cake (after it has cooled) in a bag and wait at least a day before eating, the cake only gets better.
