In December 2020, this tasting organized by the Israeli start-up Aleph Farms had marked the agri-food industry.
Not by the taster's VIP status, but by the process used by the young company.
She created her dish of the day from beef stem cells, reproduced in a laboratory in a controlled atmosphere.
The principle: multiply these cell lines outside the animal body to achieve a product that reproduces the texture, appearance and above all the taste of meat.
And this, whether it is chicken, beef, duck, pig or even fish.
The process promises both not to kill animals and to limit the impact on the planet.
Like Aleph Farms, dozens of start-ups are working on these processes, sometimes criticized but often promising.
