In recent years we have been aware of dynamic changes in our consumption patterns and not only in Israel but in most parts of the world.

A number of variables have led to a significantly higher rate of change compared to previous years.

One of the variables is of course the corona crisis that has caused us all to adapt to a new reality without preparation and without compromise and to adopt a different and new routine of life that has affected us in many areas.

Another variable, especially relevant when the subject is meat, is the research and development in food technologies, which led the food-tech entrepreneurs (and Israel is one of the leading countries in the field) to engineer meat for us that does not involve killing an animal.

Although the technological capability is still non-commercial, which means that it will take time for the pieces of meat in the butcher shop to arrive not in a refrigerated truck from the slaughterhouse but from the 3D printer, but even if it is delayed - let it come.

The future belongs to the civilized flesh

At this stage, we will be content with the existing technologies we have in the freezers in the marketing chains that present us with innovation in the field of meat substitutes, such as Beyond Meat marketed by Diplomat, British Mittels Pharm products marketed by Tnuva, Wonder products marketed by Zoglowek and sensational Tevol products from Osem. Smaller.

The world meat market rolls in about $ 1.4 trillion a year and also includes the processed meat which accounts for about a third of total consumption.

Forecasts for the civilized meat market are aimed at a market of more than $ 20 billion.

The meat substitute market currently accounts for 5.5% of all animal meat market sales - and is growing.

Disposable dishes and sugary drinks

We will move on to two more key components in our independence basket.

In recent months we have witnessed two reforms approved by the government for a significant tax increase.

The first in collaboration with the Ministry of Health on sugary drinks (and those that do not, such as diet drinks ...) and our favorite cola package jumped from a price of 35 shekels to 50 shekels and more.

The second reform - in collaboration with the Ministry of Environmental Protection - added to every kilogram a product of the type of disposable plastic utensils, a tax at the rate of NIS 11 + VAT (12.87).

Add to that the retail profit line and you will find that the profit line and a package of large thick plates weighing 1 kg that we purchased until the reform at an average price of NIS 18.90, jumped to a price of NIS 44.90 (at this point I am still learning the formula, how 45 = 19 + 13 .. .We may understand in the future).

Manufacturers lost, retailers did not

The reforms did affect consumption habits but not retailers, sugary drinks lost market share but the soaring price almost completely narrowed the gap in the financial difference.

In the field of disposable tools, sales lost more than 35% of the quantity, but sales volumes remained almost the same because the huge price differences led to the same shekel that the retailer earned yesterday, he earns today with easier work and process, not to mention increased sales of sharp tools Twice from consumables.

This year we put together two baskets to suit everyone, in both baskets we included 29 parallel products, but from different worlds, for chorizo from the Baldi butcher series (for example), we placed a competitor in the form of a vegetarian chorizo from the Wonders product series.

In front of the cola bottle we put a bottle of malt beer and next to Achla's hummus salad we put raw tahini of whole sesame baraka, we replaced the plastic serving utensils with sugar cane utensils, in front of the marshmallow we put a package of date mahjol, next to the handmade white flour pitas we put spelled pitas .

The only thing the two baskets have in common is the fresh vegetables, as a delicious and fresh vegetable salad probably has no substitute, whether it is served alongside a chicken skewer or alongside a vegetarian burger.

So what do you put on the BBQ?

As every year, we also surveyed what the Israeli Blaine likes to burn on the BBQ on Independence Day and it turns out that with constant innovation and new products,

the

taste

remains

traditional

:

Meatballs

and

burgers

In the third place, the entrecote piece with or without the main bone is chosen

to

be

marbled and

juicy

. High-quality and varied products on the axis between German Frankfurter and South American chorizo.

We examined the "regular" basket versus the "green" basket at the six leading retail chains and found that this year is worth being green, because the replacement, perishable basket (and some would say the healthy one) is cheaper than 25% of the classic Independence Day basket, so maybe this year is worth giving up Sacrifice the holiday and save a few shekels.
