For local and artisanal consumption
The recovered milk is poured into the
Albora
machine with an already prepared mixture of ferments.
The machine is responsible for transforming, molding and pressing the cheeses.
Albora sends an SMS to indicate that the cheeses are ready.
They are then soaked by the producer in water with added salt.
Albora sends back an SMS to indicate that this second step is complete.
The cheeses are then placed in crates for 8 weeks for maturing before being marketed.
