The preparation for Passover, the picnics on Hol HaMoed and the preparations for Independence Day, led to a significant increase in meat consumption in Israel. How do you make sure the meat is fresh before buying?

The specialized butchers' market in Israel has been damaged recently in light of the increase in meat prices, increased competition from marketing chains and the cost of living which results in the consumption of a limited basket of products, but this week, they received a boost under the auspices of Independence Day, the preparation for which led to a significant increase in the consumption of chicken and meat products.

It is estimated that this month, in the run-up to Passover until Independence Day, the volume of sales in the butchery market is at a rate of about 80% compared to an average month.

The average amount of a transaction at a butcher's shop in honor of Independence Day is estimated at NIS 500-600 and that the Israeli consumer's common basket for Independence Day mainly includes: chickens, kebabs, hot dogs, hamburgers, steaks, chicken livers and wings.

From an analysis recently carried out by the CofaceBDi company that included retail marketing of chicken and meat products in butcher shops and food marketing chains, it appears that the butcher shop market in Israel in 2022 presented revenues in the amount of approximately NIS 8.43 billion, without a significant change compared to 2021. The study shows that the butcher shop market revenues in 2022 from

sales

In the food marketing chains,

they amounted to about NIS 4.78 billion, and accounted for about 57% of the market's revenues.

According to

Tahila Yanai, Co-CEO of CofaceBDi,

"under the auspices of the Corona virus, there has been an increase in demand for the products of the butchery market, mainly due to the closing of restaurants and growth in the field of home cooking along with the development of the sector's online activity.

" - 10%-8% and the increased competition from the marketing chains makes it difficult for the specialized butchers to do business.

The cost of living and the growing awareness of prices is causing the movement of customers to be diverted from the specialized butchers to the food marketing chains, at the same time as the product basket is being reduced."

During Independence Week, 3 times more "grilled" meats are sold

An analysis by the Division for Research, Economics and Strategy at the Ministry of Agriculture shows that Israelis consumed about 196,000 tons of meat in 2022.

The amount of beef consumed in Israel per capita is on average 20.9 kilos per year, which indicates an increase of about 6% compared to 2021. The analysis

also shows that during Independence Week there is a 50% increase in the amount of meat sold in the marketing chains compared to a normal week in the meat category as a whole and an increase of 3 times in the "grilled meat" category.

And what about prices?

- According to Storenext data, the average price in the marketing chains of a kilogram of frozen meat in 2022 was about NIS 42.7 per kilogram on average and the average price of a fresh front part in the marketing chains (front parts) was NIS 73.9 per kilogram.

As mentioned, meat consumption in Israel in 2022 was about 20.9 kg per capita, while the average consumption in the OECD countries is significantly lower than Israel and this year was only 14.2 kg per capita.

The list of countries that consume the most meat in the world is led by Argentina with 36.9 kg per capita, followed by the USA with 25.3 kg per capita, and in third place Brazil with 24.6 kg per capita.

The fresh meat consumed in Israel can be divided into three main categories:

Do not eat everything that is sold to you

The Ministry of Agriculture emphasizes that when it comes to meat, it is not recommended to eat everything that is sold to us in stores.

Be careful and buy meat only in authorized places, with a business license that are under supervision, make sure to buy a product in original packaging, when it is closed, clean and has a label that also has a production date and an expiration date.

In Israel, there are businesses that sell frozen meat that has been thawed and present it as fresh meat - and this is a violation of the law, since the quality of "thawed" meat is inferior to fresh meat.

This way you will know that the meat you buy and eat is fresh

Tips and rules of thumb for consumers to check the level of freshness of beef:

fresh beef is red in appearance but lacks luster (the luster is usually a sign of chemical additives added to the meat). A

fine piece of fresh beef has a marbled appearance (similar to the texture of marble).

Important Maintain the cold chain of the meat - fresh meat must be kept at the temperature of the refrigerator (4 degrees). It is very important not to let the meat heat up. That is why it is recommended to buy them at the end of the purchase, get home without delays and store it in the refrigerator as soon as possible. The temperature of the home refrigerator must be checked

immediately Once upon a time, in the cooling chambers the temperature should be less than 4 degrees and in the freezing chambers 18 degrees.

It is forbidden to freeze products that have been thawed before.

4 iron rules in preparing meat

There are 4 iron rules in the preparation of home food:

Cleanliness:

the meat cutting surfaces, knives, and other tools that have come into contact with uncooked products must be thoroughly cleaned.

Also, you must wash your hands frequently during their preparation.

For cleaning we will use a lot of running water and soap.

Separation: It is important to separate raw products that have not yet been cooked from ready-to-eat products such as salads that are eaten without further treatment or cooked products after cooking.

The

separation

can be a physical separation, that is, for cutting poultry and meat we will use one cutting surface and for cutting vegetables we will use another surface or alternatively the separation of the products can be at different times, meaning first we prepare all the salads and other ready-to-eat products and only after that we start preparing raw meats.

Cooking:

At this stage, bacteria that can be found in the meat are destroyed.

You must check that at the end of cooking the meats will be well cooked without any raw parts.

Cooling:

It is forbidden to leave products, cooked or uncooked, outside in a temperature range between 4 and 65 degrees, for more than two hours, because in this range the bacteria multiply at a relatively high rate.

After cooking, the products must be consumed or stored in the refrigerator.
