Paul bakeries, with a turnover of €822 million in 2022, represent the bulk of the Holder Group's activity. General Manager Maxime Holder leads a group that relies on both its branches and franchised stores.
THE FIGARO. - Paul has more than 800 points of sale worldwide. Do you export French recipes or adapt them?
Maxime HOLDER. - We are an ambassador of France, our customers come to seek the culture and gastronomy of our country. We offer them typically French products and, more generally, a French art of living. But we also have to adapt to the culture of each country. In Kuwait, you eat your croissant with pickles. In England, tea is twice as strong as in France.
You operate wholly in France, the UK and Singapore, franchising elsewhere. Does this involve two types of management?
