The 44-year-old Humm in the kitchen of his restaurant: food just as delicious as before

A little bit of bacon in the potato salad, a little bit of butter in the sauce: it doesn't taste any different, many amateur cooks like to claim.
The Swiss celebrity chef Daniel Humm now wants to prove at the highest level that vegetarian or vegan dishes can get by without such aids and still be excellent.
In his New York luxury restaurant "Eleven Madison Park" the 44-year-old no longer wants to offer meat or fish.
If the restaurant, which was temporarily closed in the coronavirus pandemic, reopens in June, it will be completely vegetarian, Humm told the Wall Street Journal.
With the exception of milk and tea for coffee and tea, it will even be vegan, i.e. avoid products of animal origin.
Star restaurant as a soup kitchen
"When we took this route, we made a promise to ourselves that we would only do it if the food was just as delicious as it was before," star chef Humm told the newspaper.
"My goal is to design beautiful dishes, to give people wonderful experiences, unexpected, surprising experiences that satisfy you as a meal with meat would."
Humm is not only someone who dares when it comes to the selection of his products.
The "Eleven Madison Park" in the middle of Manhattan is one of the best restaurants in the world - and was temporarily used as a soup kitchen during the corona pandemic.
Together with a charity, hundreds of meals a day were cooked in the kitchen of the luxury restaurant and then given to those in need for a small price.
In terms of vegetarian nutrition, Humm could now become the pioneer of a trend that is also increasingly noticeable in Germany.
The people in this country have recently consumed more vegetables and less pork - something that also benefits the climate.
