In many bakeries, customers have to pay more for rolls and pretzels than before.

Some are therefore drawn to the discounter.

Others reach for the cheaper white bread roll instead of multigrain bread.

Raw materials such as flour and seeds have also become more expensive.

Many bakeries in the district have therefore had to raise their prices for rolls, pretzels and other pastries.

"We couldn't avoid a price increase," says Werner Nau, owner of the bakery of the same name and head of the bakers' guild in the Fürstenfeldbruck district.

The result: "You can already feel a slight tendency to save," says Nau.

Many customers stay away.

Sales in the bakeries went down.

Nau observes that it is mostly the spontaneous buyers who no longer show up in the bakery.

"Like workers, for example, who used to get something from us during their lunch break," explains the guild foreman.

"These customers stay away and get their rolls cheaper." According to the bakery boss, it is difficult to say exactly where the customers are going, whether they are going to the discounter and buying cheaper pastries there or whether they are simply buying a lot less.

But the purchasing behavior of those who come to the branches has also changed.

“You can already tell that white rolls are being used more and less multigrain rolls,” says Nau.

Breads with seeds such as poppy, pumpkin or sunflower seeds are more expensive than normal Kaiser rolls because of their ingredients.

"The price of pumpkin seeds, for example, has risen quite a bit," reports Nau.

"The production is almost impossible for us because it is not affordable." They are already considering baking fewer multigrain rolls.

He is therefore happy about regular customers who continue to visit the local bakers.

In Puchheim, Maximilian Hünsche from the bakery and confectionery of the same name also felt a slight decline in sales.

"It's a little less busy.

I think it's because people shop more consciously and think about what they need beforehand," explains Hünsche.

He observed this in his shop on Puchheimer Lagerstrasse.

Nevertheless, customers, especially regular customers, would always treat themselves to something.

"If someone loves a particular grain roll, then they will continue to buy grain rolls," says the baker.

Josef Drexler, who runs the bakery based in Jesenwang with his son Ulrich Drexler, does not see any sacrifices or major changes among the buyers.

"People buy what they want," says the bakery boss.

This was especially the case during the Corona lockdown, says district master craftsman Franz Höfelsauer.

“There were a lot of people at home and there were snacks in the evenings, for example.

So the local bakeries were of course supported and they benefited.” That has to be maintained now.

Höfelsauer knows that the fact that customers are migrating can also be fueled by a problem that is causing concerns for companies.

"In the bakeries, there is a lack of staff in sales," says Höfelsauer.

One or the other baker has already been closed for a day.

"Of course, that also has an effect on sales." Customers who couldn't go to their bakery that day went to another.

"And that increases the risk that they will stay there," says the district craftsman.
