In 2022 the Munich Oktoberfest can finally take place again.

But you can also bring that Wiesn feeling home with you with our recipes.

"O'zapft is!" - Many Munich, Bavarians and tourists from all over the world will celebrate the Oktoberfest again this year: the largest folk festival in the world will take place again for the first time in 2022 after a two-year break.

If you prefer to stay at home, simply bring the culinary Wiesn home with you: Homemade chicken, leberkas, sausage salad and the like also taste delicious.

So you also have a hearty basis for the beer, which should not be missing at a Oktoberfest evening at home.

Oktoberfest recipes: Brotzeitbrettl with Obatzter – a cold platter in Bavarian

Let's start with a classic that is easy to make without having to stand in the kitchen.

For a hearty snack you need – depending on the number of people – a few slices of good bread, for example a farmhouse bread made from rye sourdough.

You can spread the bread with butter or lard.

Pretzels are also delicious.

You can find them in the freezer and you can freshly bake them at home.

Which of course should not be missing: Obatzter or Obatzda.

You can buy it ready-made in Bavaria, but it tastes much better when you make it yourself!

  • To do this, peel and dice an onion.

  • Mash a Camembert (300g) with a fork and mix with 40g softened butter.

  • Add 1 tsp ground cumin and 2 tsp sweet paprika powder.

  • Mix everything to a creamy mass and season with salt, pepper and hot paprika powder.

  • You can decorate the Obatzda with chopped chives.

An authentic snack board also includes various flavorful cheeses, for example mountain cheese or Allgäu Emmental, good bacon and air-dried salami such as smoked sausage.

Radishes, small gherkins and tomatoes serve as a vegetable side dish and at the same time decoration.

Of course, mustard should not be missing either.

Oktoberfest at home: Be sure to eat the Weißwurst breakfast before 12 noon

If you want to infuriate a Bavarian, you don't eat white sausage until the evening.

Tradition dictates that a Weißwurst breakfast is only served until noon.

Why actually?

One theory is that the sausage meat used to be raw, and since there were no refrigerators, the meat had to be eaten until noon before it went bad.

Even if the white sausages can be boiled and cooled today, this tradition has been preserved.

Of course, there is beer, sweet mustard and pretzels with the Weißwurst.

(By the way, you come out as an outsider when you say "pretzel".) The skin has to come off the sausage: either the classic way, i.e. sucking out the inside, or you cut the sausage lengthwise and peel out the inside.

Wiesn recipe for the sweethearts: Make your own yeast dumplings with poppy seed butter

As a vegetarian main meal or as a dessert to share: Yeast dumplings are a classic and always a hit.

For delicious yeast dumplings with poppy seeds you need the following

ingredients

:

  • 15 grams of fresh yeast

  • 100 ml warm milk

  • 2 packets of vanilla sugar

  • 250 g flour

  • 1 pinch of salt

  • 1 egg (size M)

  • 80 g plum jam

  • 100 grams of butter

  • 50 g ground poppy seeds

And this is how you prepare the yeast dumplings with poppy seed butter:

  • In a small bowl, mix the crumbled yeast with the milk and a teaspoon of vanilla sugar.

    In a bowl, mix the flour with the salt and the remaining vanilla sugar.

    Now add the yeast-milk mixture and the egg and knead everything into a smooth dough.

  • Cover the bowl with a tea towel and set in a warm place for an hour.

    The dough should then be about twice as big.

  • Divide the dough into eighths, form round pieces and flatten them with floured hands.

    Put some plum jam in the middle of each and fold the dough over it.

    Carefully form round dumplings.

  • Lay the dumplings side by side on a board and let them rest, covered, for another 15 minutes.

    Now bring a large pot with 2 liters of water to the boil, which you lightly salt.

    Reduce the heat (the water must not boil) and place the dumplings in the water.

    Cover and simmer for about 20 minutes.

    Do not remove the lid!

  • Meanwhile, melt the butter in a pan and let it brown slightly.

    Mix in the poppy seeds and let them roast for a few minutes, stirring as you go.

  • Now you can take the dumplings out of the water with a slotted spoon, place 2 dumplings in a deep plate and drizzle over the poppy seed butter.

    In order to create a real Wiesn atmosphere, the language must of course be right.
