So how can you use baking soda to make the chicken crispy, be it as a whole bird or the thighs?
That's how it's done:
Mix one part of baking soda with three to four pinches of salt, add some black pepper and sprinkle the mixture over the whole chicken.
Massage everything into the skin of the fresh chicken.
Make sure to let the chicken
rest
afterwards
so that the baking soda can work its magic.
A rest period of 12 to 24 hours is recommended for a whole chicken - so be sure to prepare the chicken
the day
before.
Then you can bake the chicken in the oven as usual (you can see the classic preparation for roasting chicken in the oven in the video above) or fry it in the pan.
By the way, in this case you should never
use
baking soda instead of baking powder
, as
baking
soda would create an unpleasant aftertaste.
