Vegan is often easier than you might think!

I am all the more happy about dishes that are “naturally” vegan AND taste good, like this Asian sweet potato and coconut soup with coriander pesto.

That's how it's done:
You need these ingredients for the delicious soup:
Sweet Potato Coconut Soup:
2 tbsp cooking oil
80 g onions, diced
300g sweet potatoes, peeled and diced
2 tsp red curry paste
300 ml vegetable broth
400 ml coconut milk
300ml of water
1.5 tsp salt
Coriander pesto:
30 g coriander, fresh
1 tsp sesame oil
1 tbsp lime juice
0.5 tsp salt
60 g cashew nuts
The preparation is really simple:
For the sweet potato and coconut soup:
Heat the cooking oil in a saucepan.
Sauté the diced onions in it until translucent.
Add the sweet potatoes and fry as well.
Stir in curry paste.
Deglaze with vegetable broth, coconut milk and water.
Add salt and let it boil.
Simmer for about 15 minutes or until the sweet potatoes are tender.
For the coriander pesto:
wash the coriander, shake dry and place in a tall container (tip: you can use the stalks).
Puree together with sesame oil, lime juice, salt and cashew nuts to form a pesto.
Finely puree the soup with a hand blender.
If necessary, stretch with a little water, depending on which soup consistency you prefer.
Serve the sweet potato and coconut soup garnished with pesto.
