Çilbir is a traditional Turkish breakfast dish that has existed in Ottoman cuisine for centuries. It's easy to prepare, contains few ingredients but lots of flavor.

Poached eggs are traditionally served, but it works just as well (and a little easier) with waxy-soft boiled eggs. For the chili butter: Melt the butter in a small saucepan. Flavor with garlic and chili and simmer for 2 minutes. Season the yogurt with salt, pepper, lemon zest and lemon juice. Drizzle chili butter over the top and serve garnished with chopped parsley.
