The original taco - which I recommend trying when you have a freshly made nixtamalized tortilla on hand, with its characteristic aroma and elasticity. Little more is needed to prepare a fried or scrambled egg taco, as is or with a quick sauté of onion and tomato that will turn it into Mexican eggs.
