Philippe Mille, who has been in post since 2010 on Saint-Nicaise hill, is replaced by Christophe Moret. Mille plans to open his own restaurant Arbane in April, in a former bank near Reims station.
Moret won the title of Meilleur Ouvrier de France in 2011 and two stars in 2012 at Les Crayères. He will take up his duties on March 1, with a roadmap to “participate[r] in the new dynamic of beautifying and perfecting the customer experience initiated this year”
