Pedro Heras from Malaga makes 1,500 rolls every day at Obrador Máximo. The muffins are served in luxury hotels and renowned restaurants throughout Spain.

“It is, without a doubt, one of the great products of the mountains,” says chef Benito Gómez. The recipe for the molletes was born in 1892 by Heras's great-great-grandmother, Isabel Gil, who worked in a bakery in exchange for a piece of bread per day.
