The potato is the most consumed vegetable in France, with 41 million tonnes produced each year. More than 3,000 varieties have been identified around the world, including 150 in France.

For a suitable harvest, it is preferable to have soil with a pH between 4.4 and 8.5. The soil should be both light and loose and can be enriched using a fertilizer especially rich in potassium. Among the main diseases that can affect the potato, late blight is particularly feared. The most resistant to the latter are: The Apollo Bernadette and The White one.
