Yacon & Co, a young company from Vichy, focuses on yacon, a South American tuber, and its sweetening power. Half as many calories and four times less rich in sucrosethat white sugar, the tuber, grown in Peru, has natural sweetening powers largely unknown in Europe.

A processing plant will be created in Peru to produce 400 tonnes of syrup per year and “become the world leader in yacon syrup”. The start-up has more than 100,000 online customers and is experiencing 250% annual growth.
