The first rule is never to offer frozen sparkling wine: vatirato out of the cellar a couple of hours before and cooled in a bucket with crushed ice, cold water and coarse salt.
The cellar is in fact the ideal environment for storing sparkling wine: it must be dark, fresh and free of temperature changes. the bottles must be kept in a horizontal position and the best temperature is between 8 and 12 degrees.
When opening the bottle, the cap must be held by turning the bottle slightly inclined with the other hand and always accompanying the expulsion of the cap. The gas must be released slowly and the sparkling wine is pouring, keeping the bottle from the bottom and not from the neck, to prevent it from heating up with the heat of the hand. Never use ice in the glass. Finally, the latter must be exclusively in a ditulipan-shaped flute, which allows the aromas to develop freely.
To best enjoy the effervescence, it is good to rinse glasses with warm water and mild soap. (HANDLE).
