Ingredients
- 3 eggs
- 250g sugar (1/4 1 cups)
- 180 ml of oil (3/4 cup - can replace half the amount of apple cider)
- 300g thinly grated carrot (4-5 carrots)
- 210g flour (1/2 1 cups)
- 1 teaspoon baking powder
- ½ teaspoon of baking soda
- ½ teaspoon salt
- 1 teaspoon cinnamon
- ¼ tsp of nutmeg
- 50 chopped walnuts
- 100 grams of chopped chocolate or chocolate chips
- Grated orange peel
- Freshly grated Metinger ginger

Preparation
Preheat oven to 170 degrees.
Prune eggs and sugar in the bowl 2-3 minutes (also possible in a mixer with the whipped cream balloon) for a light and airy mixture.
Add the oil, and mix to a uniform mixture.
In a separate bowl, mix flour, baking powder, baking soda, cinnamon and nutmeg. Stir until uniform mixture is obtained.
Mix in the carrots and toppings (nuts and / or chocolate). Be careful about over-mixing.
Pour the mixture into two greased English cake molds and bake for 35-40 minutes or until a toothpick inserted in the center of the cookie comes out with moist crumbs.
