The vibrant Tel Aviv market does not stop evolving and the culinary supply is growing, and in particular, is becoming more and more diverse. Lela is the new Georgian bakery of Lily Ben Shalom, the chef and owner of the former Racha, the Georgian restaurant that made a move from Jerusalem to Tel Aviv a few years ago and recently closed. In Lala, Lily serves a small selection of traditional Georgian baked goods made from cheesecake stuffed with cheesecake that has all the necessary folds (NIS 18), through an open-cut Acheroli pastry with a mixture of Georgian cheese and egg (NIS 28), Emeroli - round pastry A bubbly cheese blend, and the highlight is Khachpuri Panubani, a square cheese dough made from folded dough that is cut into two triangles, stuffed with cheese and spinach, or the vegan version of red beans (NIS 16).

Matti Nakash has a long-standing love story with Thailand, and recently, along with his Asian grocery uncle, has taken this whole love story and translated it into an authentic and wonderful Thai soup restaurant. He decided to focus on one dish - Cotiao. It is a Thai dish based on beef stocked with noodles, meat, chicken patties, sprouts and leaves, which also incorporates, in the eating and non-cooking stages, different kinds of sauces that emphasize the flavors and diversify each bite.

Nakash brought from Thailand everything he needed for his marquee, a special three-compartment pot for cooking the hinges and noodles, specialty utensils just like in Thailand stalls, precise spices and real fish sauce.

It focuses on two portions, the first being Koutiyu Guy (NIS 48), a soup with beef chunks, beef stock and noodles, served with small chicken patties brewed in water with a daikon. The second soup is a fine Kutiao (NIS 52) and is based on chicken stock and served with a whole piece of chicken that breaks apart from its bone and is flavored with noodles and sprouts.

The highlight is three types of spicy that will be waiting for you on the table, the first a sweet chili based on yellow chilli, the second - a red mash from dry and fat chili, and the third - a spicy based on green peppers and garlic. Matti patiently explains everything and enjoys taking his guests for a short tour of Thailand in the form of a soup bowl.

The place is only open three days a week - two in the evening, and Friday at noon, and only until the soup is over.

Carmel 40 - Fisherman's sandwiches like in Istanbul

In the middle of Carmel Street, which is not the main artery of the market, a new booth recently made a wonderful fish sandwich. Carmel 40 is located right in front of Rossthum's old fish shop, and the stall is Rossthom's collaboration with his friend Elad, who stands above the plancha in the new stall and behind the carefully crafted sandwich train.

Offer a soft bun sandwich with grilled fish fillets, with a few homemade spreads, fried onions, lettuce, tomato and homemade chimichuri (NIS 40). The result is soft and wonderful, reminiscent of the same sandwiches from the markets in Turkey and Greece. There is also fried seafood or on the plancha (NIS 35-50), and shiny fresh sardines (NIS 40), and Saviche, which this time appeared in a winter version with white palmia and fresh strawberries (NIS 35), a real pleasure.

There is very little crowded seating around the small stand here, and the work on the sandwiches is a bit slow, but the sandwich, wrapped and cut in half for convenience, can also go with you wherever you want, and if you are not in a hurry then get a nice olive dish to wait with it Cold beer, and soak up some market atmosphere.

When Robbie Chen returned from his big trip to Thailand, he couldn't forget about Onuma, a Thai young woman who fell in love with her and returned to Thailand again and again. Finally, they got married, came to Israel and opened a restaurant in the Carmel Market, two blocks from where Ruby grew up. At Onuma restaurant, Onuma brews traditional Thai food, ranging from Thai salads such as chopped chicken salad with herbs and roasted rice (NIS 42) to salad of minced chives with mint and onion (NIS 48).

There are three types of soups, the familiar Tom Yum with chicken, tofu or seafood (NIS 40-50), or Koteyao soup that if you have read the article by now you probably already know what it is (NIS 40-45). There are main dishes based on rice or noodles, sautéed or fried, based on tofu, beef, chicken or seafood (NIS 40-58). The restaurant itself is located in the market but when you enter it feels a quiet and calm haven from the hustle and bustle outside, modestly designed here but feels like Thailand and the gracious and kind homeowners and Onuma is a modest and wonderful cook. If you miss Thailand this is the place for you. Currently only open at noon and afternoon, but will open later in the evening.

For 35 years, Roni Hebroni has made pizzas at veteran and beloved pizza maker Roni Ma'ale Adumim and Pizza Roni's in Jerusalem. A while ago he sold his business and, following his daughters, made a move to Tel Aviv. Along with his architect's daughter, Ronnie set up a new pizzeria, not just in the Carmel market but close by. At this pizzeria he prepares his pizzas from a recipe he made years ago from three types of flours and with 48 hours of swelling. He brings the mozzarella and tomatoes he uses from Italy and the pizza combines all sorts of creative additions or some more solid.

The pizzas themselves are personal but large and can be enough for a couple of diners, the dough itself is thin but volume and flexible, and comes with toppings like artichoke, pine nuts, Bulgarian cheese, anchovies, butter-fried mushrooms, truffle cheese, dreamy cheese, figs and many cheeses ( NIS 46-62).

There are also some particularly entertaining starters such as Italian Borta (NIS 42), Artichoke a la Romana (NIS 24), anchovies with mustard, capers and pearl onions (NIS 29) and more. Decorated here in a homely and cozy way and the large windows face the street. Not only is the pizza here wonderful, the service is also pleasant and everything goes well in Siesta's atmosphere.
