Ingredients

    • Spoon (for 8 personalized 10 tartlet molds)

    • 150 grams of flour (cup + spoon)
    • 40 grams of ground almonds (half a cup)
    • 30 grams of sugar powder (one quarter cup)
    • 30 grams of cocoa (3 tablespoons)
    • 150 grams of cold butter cut into cubes
    • 1 yolk
    • Add a chocolate creme brulee

    • 150 grams of dark chocolate 60% diced cocoa solids
    • 300 ml of sweet cream 38% (1/4 1 cups)
    • 2 large yolks
    • 1 as a dark pithrum
    • Demerara sugar for dispersing and burning

Preparation

    How to make tartlet filled with chocolate brulee?

  • Easily: Place a food processor with a metal blade on all the ingredients in order of appearance and process in short pulses to smooth dough. Stop as soon as the dough starts to form (avoid over-processing). Flatten the dough onto a plastic wrap, wrap well and refrigerate for half an hour.

  • Remove the cold dough. Layer on the clingable nylon (highly recommended) or on a 5 to 7 mm thick surface and carefully line the bottom of the tartlet molds. Care should be taken to attach the dough to the bottom edges and sides.

  • Prepare for blind baking: Place baking paper (cut to the appropriate size) over the dough and place over chickpea / bean kernels (which are weights) and bake for about 10 minutes in a preheated oven to 180 degrees. Remove the weights and bake for another 5 minutes at 150 degrees. Remove from oven and cool in molds.

  • Preparation of the cream: Put the chocolate and cream into a small bowl. Melt and bring to a boil. Remove from heat and continue to mix to cool the mixture.

  • Add in the yolks and rum and quickly devour to a smooth, smooth mixture. (It is advisable to slightly tap the bottom of the cauldron over the work surface to get rid of air bubbles).

  • Pour the liquid cream over the frying pan with a large spoon and fill it almost to the end.

  • Bake for about 15 minutes at a temperature of 150 degrees until the filling is stabilized. Correct Signs: The margin adjacent to the spindle is stable, a crust is formed and the center vibrates slightly.

  • Remove from oven and cool in molds for about 20 minutes. Put in the refrigerator for another 20 minutes for full cooling.
