ROME - The "Romanissimi" (Amatriciana, Carbonara, Cacio e Pepe and Gricia) land at Termini Station in Rome with chef Antonello Colonna and the "Open Colonna Bistrò" restaurant, inaugurated today and created with Chef Express (Cremonini Group). The restaurant is located inside the renewed spaces of the Ala Mazzoniana, on the side of Via Giolitti (near the head gallery). "Open Colonna Bistrò", divided into two floors, is integrated on the ground floor, by the Cioccolatitaliani brand ice cream bar and by the Renzini Salumi gourmet space. The restaurant will offer a selection of traditional dishes. With a price that does not exceed 20 euros you can choose and taste a "Romanissimo", a glass of wine and a dessert. The venue has 120 seats. Chef Express CEO Cristian Biasoni recalled that the area where "Open Colonna Bistrò" was built has been managed by Chef Express since 2005 and was occupied by a coffee bar. He also indicated that the entire operation, for the three refreshment points, had an investment of around two million euros. The choice on chef Colonna "came instead natural thanks to a knowledge and collaboration that has lasted for over 20 years". Chef Colonna instead "explained that it will be a culinary proposal that I have never made in Rome, based on authentic Romanity integrated by the regional recipes of Lazio and Italy". The Chief Operating Officer of Grandi Stazioni Retail Sebastien de Rose said that "the goal is to enhance" Roma Termini, the largest station in Italy, the second station in Europe ".
