"Always throw away germinating potatoes," our grandmothers already knew. But when are expelled potatoes poisonous? And is it enough to simply peel them?
Just bought, and then that: The potatoes are beginning to sprout - delicate green shoots sprout from the juicy tubers. This happens very quickly, especially in warm, bright kitchens. But are germinating potatoes really inedible or can I still eat them?
Take a close look at germinating potatoes
"Whether you can still eat potatoes, regardless of whether they are cooked as foil potatoes or cooked differently, depends on how they look," reveals Harald Seitz from the Federal Center for Nutrition on bild.de. Because: the more shoots can be seen, the more solanine is produced in the potato - and that is toxic . The consequences: headache, nausea and vomiting up to breathing problems .
If you follow these rules, nothing should happen to you:
Potatoes that are already shriveled and covered with many buds must be thrown away. Peeling is not enough because it does not remove all inedible areas.
On the other hand, if the potato is still plump and only germinates in a few places , it can still be eaten. According to the expert, no more than three to five germs should be visible in small potatoes, and no more than four to eight in hand-sized potatoes.
Here's how potatoes stay fresh for much longer.
