The dough of the asparagus ham rolls:

  • 50 g grated gouda

For a brisk dip:

  • 200 g sour cream
  • 1 pinch of pepper
  • 1 pinch of salt
  • 1 bunch of chives

How to prepare the asparagus rolls with ham wrapped in dough

  • Mix the flour, salt and sugar in a bowl. Warm the milk slightly and let the butter melt in it.
  • The yeast also migrates into the milk and is dissolved in it. After waiting ten minutes, pour this mixture together with the egg into the flour mixture. Knead everything into a homogeneous dough.
  • The yeast dough * must now be covered in a warm place for about an hour.
  • Whisk the egg and cut the peeled asparagus in the middle.
  • Now the yeast dough is rolled out thinly on a floured work surface and then rectangles are cut out. This should be adjusted approximately to the length of the asparagus pieces.
  • Halve the ham leaves in the middle. Now put a piece of ham on a piece of dough and then roll up the asparagus. The edges of the dough must be smeared with beaten egg, including the ends on the right and left. Then close everything.
  • Coat the rolls with egg on one side and sprinkle with sesame, fried onions or grated Gouda.
  • Place at around 180 to 200 degrees in the oven or grill (indirectly). Bake there for about 20 minutes until golden brown.
  • Mix in sour cream, pepper, salt and chopped chives. Serve this as a dip with the rolls.
