BBQ season opens *! Anyone who informs grill professionals about the perfect preparation of spare ribs will be the first to hear about the famous 3-2-1 method: smoke for three hours, steam for two hours and then glaze for another hour.

It is true that this approach conjures up buttery and juicy ribs on the plate, but: It works differently! With my 30-90-30 method. The numbers stand for minutes. And if you are agile in mathematics, you know that this method beats the pros by more than 50 percent in the preparation time - and the spare ribs also become tender and juicy .

The spice mix for the spare ribs

Spare ribs of course need some spice : here you can put together the same one that I used (see recipe below). Or you can create your own. Last option: buy a ready mix.

Smoking the spare ribs

This requires a gas or kettle grill that you can lock - probably the case with a kettle grill anyway. And you need smoking chips or chips. On the kettle grill, place them on the coals or briquettes. In the gas grill on one of the burners. But not without packing them in a smoking box first. The temperature for this 30-minute smoking: 120 degrees.

Steaming the spare ribs

To do this, the spare ribs go into a roasting pan . Place a rack in this roaster so that the spare ribs do not touch the ground. Otherwise they are in the beer (alternatively apple juice), which we need for steaming. If you don't have a frame: Simply put a few saucers upside down and you're ready to go. For 90 minutes, the spare ribs in the sealed roasting pan are steamed in the indirect heat on the grill.

Glazing the spare ribs

The simplest exercise when grilling spare ribs: The spare ribs now come back into the indirect heat zone of the grill at 120 degrees. Brush on both sides with the glaze and remain patient .

Tip : the glaze also serves wonderfully as a sauce - should too little glaze stick to the spare ribs…

Ingredients for the spare ribs in general :

  • 1.5 kg pork rib
  • 0.5 liters of beer

Ingredients for the spice mix of spare ribs :

  • 2 tbsp paprika powder (spicy)
  • 1 tbsp paprika powder (mild)
  • 1 tablespoon of ground pepper
  • 1 tbsp sea salt
  • 1 tsp curry powder
  • 1 tsp garlic powder
  • 1 tsp onion powder

Ingredients for the glaze :

  • 0.5 liter BBQ sauce
  • 0.1 liters of soy sauce
  • 0.25 liters of sweet chili sauce

Preparation of spare ribs

  • Place all the spices for the spice mixture in a sealable container and shake well.
  • Sprinkle the ribs with the spice mixture and leave to marinate covered for a few hours or a night.

  • Smoke the ribs in the grill at 120 degrees for 30 minutes.
  • Now put the ribs in the Dutch oven (or a roasting pan) on a grid and steam for around 90 minutes on low heat at around 160 degrees. But don't forget to put the beer in the Dutch oven / roaster.
  • Now arrange the glaze. Put the ingredients in a container and mix well.
  • Brush the ribs with it and place it in indirect heat at around 120 degrees in the spare ribs holder on the grill.
  • Now the ribs are glazed again for 30 minutes. Another glaze after half this time is optional.
