Here is a recipe for vegetarian pancakes and very simple. And for good reason, two ingredients are enough: a banana and two eggs. Result: an airy dessert, slightly sweet, with the good taste of fruit.

In the spirit of a banana-split, garnish the small pancakes with whipped cream and a chocolate coulis. But everyone can compose according to their desires: the options of strawberry salad (it's season!) Or applesauce are also approved by the restaurateur.

The ingredients for the flourless pancake recipe

For 3 people:

  • 2 eggs
  • 1 banana
  • 25 cl of fresh cream
  • 1 tablespoon icing sugar
  • 1 or 2 pinches of cinnamon
  • A knob of butter or a drizzle of oil
  • 50 g chocolate

The recipe steps

1. Mount the whipped cream

With a whisk, whisk 10-15 cl of whipping cream with cinnamon, until it is airy. Add the icing sugar. Continue beating to form a nice whipped cream. Set aside in the refrigerator.

2. Prepare the pancake batter

Separate the whites from the yolks. Beating egg whites. Reserve.

Mix the banana or mash it with a fork. Add the egg yolks. Pour into the white egg whites and mix gently with a maryse, until you get a homogeneous consistency.

3. Cook

Melt your fat (butter or oil) in a large skillet. Place 3 circles of pancake batter there and spread them with the back of the ladle or spoon. Be careful when cooking: the dough is very delicate.

When you notice that each pancake is standing, lift it with a spatula to check that it is golden brown. If this is the case, turn it over without breaking it and cook it in the same way on the other side. Reserve the pancakes on a plate.

4. Concoct the chocolate coulis

In a small saucepan, simmer the rest of the liquid cream. Get out of the fire.

Add the chocolate in pieces. Beat to obtain a homogeneous mixture.

5. Train

On each plate, place a pancake, a layer of whipped cream, and again a pancake and a layer of whipped cream.

Pour the chocolate coulis still warm. To serve.
