Bake cake: You need these ingredients for the rhubarb cake with sprinkles

For the cake batter

  • 200 g of flour
  • 100 g butter, room temperature
  • 100 g of sugar
  • 2 eggs, size 
  • 1 egg white (save the egg yolk)
  • 1 packet of vanilla sugar
  • 1 packet of baking powder *

For the filling

  • 1 pack of vanilla pudding powder
  • 0.5 l milk
  • 1 egg yolk
  • 40 g of sugar
  • 400 g rhubarb

For the sprinkles

  • 125 g butter, room temperature
  • 150 g flour
  • 100 g of sugar
  • 1 packet of vanilla sugar

Cake recipe: How to bake the rhubarb cake with crumbles

  • Preheat the oven to 155 degrees convection.
  • Clean the rhubarb and cut it into small pieces.
  • Separate an egg, the egg whites you need for the bottom, the egg yolks for the filling.
  • Prepare the custard from the powder, sugar, egg yolk and milk according to the package instructions. Then cover the pudding and let it cool down a bit.
  • Now mix the flour, sugar, baking powder and vanilla sugar in a bowl.
  • Now add the two eggs, the egg whites and the butter and process everything into a dough using a hand mixer.
  • Grease the baking pan (26 diameter) thoroughly.
  • Spread the dough evenly on the bottom of the baking tin and press a small edge all around with floured hands.
  • Then spread the pudding on the dough base. 
  • Then pour the rhubarb pieces evenly onto the pudding.
  • Make the crumble by adding the sugar and vanilla sugar to the flour, mix everything well and then add the chopped butter. Then knead into a dough with your hands until the crumbs are small enough.
  • Then spread the crumble on the rhubarb and bake the cake for about 55 minutes.
