Currants refine cakes or are boiled into jelly. The pure juice can also be obtained from the berries. Poured with water or sparkling wine it becomes the perfect summer drink.
Berlin (dpa / tmn) - Currants contain a lot of juice. If you like, you can easily make fresh juice out of the berries: Wash a kilogram of red and 250 grams of black currants, drain and boil with about 150 grams of brown sugar and 350 milliliters of water with stirring until the berries burst, the association advises Slow food.
All of this is drained in a sieve and the juice is collected. The fruit remnants are then passed through a sieve with a spatula so that no core remnants get into the juice.
Now you pour the juice into clean bottles, let it cool and you can keep it closed in the fridge. It lasts for a week or two.
If the juice is too boring for you, turn it into a refreshing summer drink: Simply pour the red juice with chilled mineral water or sparkling wine and enjoy.
